49 C 4-601.11(C): (C) NonFOOD-CONTACT SURFACES of EQUIPMENT shall be kept free of an accumulation of dust, dirt, FOOD residue, and other debris.
The shelves in the walk-in cooler are unclean--dark spots were found. It may be mold. - (Correct By: Oct 17, 2022)
55 C 6-501.12: (A)PHYSICAL FACILITIES shall be cleaned as often as necessary to keep them clean.(B)Except for cleaning that is necessary due to a spill or other accident, cleaning shall be done during periods when the least amount of FOOD is exposed such as after closing.
Observed the walls of the walk-in cooler to be unclean--dirt and debris on the walls - (Correct By: Oct 17, 2022)
Inspection Comments   THE PERSON-IN-CHARGE WAS INFORMED OF THE COMPLAINT. THE FACILITY WAS INSPECTED, AND A DARK SUBSTANCE THAT APPEARS TO BE MOLD WAS OBSERVED ON THE SHELVES LOCATED WITHIN THE WALK-IN COOLER.

A CORRECTION DATE HAS BEEN SCHEDULED, AND A FOLLOW-UP WILL OCCUR TO ENSURE COMPLIANCE.
